Green Goddess Grain Bowl with Tahini Drizzle

Greens, grains, and goodness — all in one bowl. This one starts with a vibrant base of seven different plants, tossed with a super simple green tahini dressing whipped up in seconds. It’s the kind of salad that leaves you feeling nourished, energised, and glowing from the inside out.
INGREDIENTS
For the Grains & Greens Mix:
1 bag of mixed grains
A handful of shredded kale
1 small bunch of spring onions
1 tsp olive oil
Salt + pepper
For the Salad Base:
½ cucumber, thinly sliced
1 small apple, finely sliced
100g edamame beans
100g mangetout, chopped
50g broccoli, chopped
Handful of fresh coriander
2 tbsp mixed seeds
For the dressing:
1 bunch of coriander
1 large green chilli
1 clove of garlic
1 tsp cumin
½ tsp turmeric
1tsp salt
¼ cup olive oil
¼ cup tahini
½ lemon, juiced
METHOD
Make the grains & greens mix:
In a bowl, combine the cooked grains and lentils with the shredded kale, olive oil and spring onion, salt, and pepper. Set aside.
Prep the veggies:
Lightly blanch the broccoli, sugar snaps, and peas for 1–2 minutes in boiling water, then plunge into ice water to keep their colour and crunch. Drain and pat dry.
Cook the edamame as per packet instructions.
Assemble the salad:
In a large bowl, combine the cucumber, apple, edamame, blanched veg and fresh herbs.
Add the grains & greens mix and toss everything together.
Make the dressing:
In a blender or food processor, combine coriander, green chilli, garlic, cumin, turmeric, salt, olive oil, tahini, and lemon juice.
Blend until smooth and creamy. Add a splash of water if needed to thin to your desired consistency.
Taste and adjust salt, lemon or chilli to your liking.
Dress & finish:
Drizzle the dressing over the salad, toss well to combine, and top with a sprinkle of mixed seeds.
