What is Zhoug?

Pronounced: z-oo-g

Notes of: coriander, parsley, green chilli + garlic

It tastes like: A bit like a Middle-Eastern pesto, if you replace basil with corainder and add a little heat from green chilli

Meet zhoug, our latest kitchen obsession and the star of our Mezze Grain Bowl. It’s popular in Middle Eastern cuisine and though it’s originally from Yemen, you find versions of it across most of the Middle East.

It’s bright in colour and flavour, and a little goes a long way. It’s packed with herbs so it has a very fresh, fragrant flavour as well as bit of spice from green chilli.

TRY ZHOUG AT HOME

We use it as a dressing, but it doesn’t stop there. You can buy zhoug paste in most major supermarkets - here’s a few tips from our product development team on how to use it at home:

- Add it to roasted vegetables - just add 1tbsp zhoug to 2tbsp oil and coat your veg in it before roasting.

- Make a yoghurt dip - mix 1tbsp zhoug, a drizzle of oil and a pinch of salt with a cup of dairy-free yoghurt for an easy dip - thisi s really good served with falafel and pita

- Make a vinigiarette - mix 1tbsp zhoug with 5tbsp olive oil, 1tbsp lemon juice and 3tbsp water for a lighter dressing

- Zhoug-roasted cauliflower - Next time you make roasted cauli or cauli steaks, marinade it in a simple zhoug, oil and salt dressing beforehand. Particularly good for making cauliflower shawarma with!
