Dark Choc, Fig + Hazelnut Granola

A bold title, but the only appropriate title for a granola this good. Back in 2018, we used to produce breakfast pots and this granola featured in one. Our chefs would start at 6am, so by the time we arrived at the office at 9am there’d be trays of chocolate granola lining the kitchen counters to cool. That rich, chocolatey smell (and the still-slightly-warm chunks we’d steal) hold a special place in our hearts. Although it’s not quite the same when you have to bake it yourself, this granola is worth the effort.

Recipe:

EXTRA CHOCOLATEY FIG + HAZELNUT GRANOLA
Serves 6

INGREDIENTS

- 200g oats
- 60g hazelnuts
- 130g sunflower seeds
- 150g coconut oil
- 1 tbsp vanilla extract
- 4 tbsp maple syrup
- 50g cocoa powder
- 40g cacao powder
- 100g figs

METHOD

  1. Add the coconut oil, maple syrup and vanilla extract to a saucepan. Stir over a medium heat for a few minutes until the coconut oil has melted.

  2. Roughly chop the dried figs. Add to a mixing bowl along with all of the other dry ingredients. Pour in the melted coconut oil mix and mix well.

  3. Spread the mix over a lined baking tray and bake at 180ºC for around 25 minutes.

  4. Remove from the oven and leave to cool before serving.

Serve with your favourite plant milk or dairy-free yoghurt and pear compote.
