Mustard Maple Roasted Carrots

Recipe:

MAPLE MUSTARD ROASTED CARROTS
Serves 2-4

INGREDIENTS

- 1 bag of carrots
- 2 tbsp extra virgin olive oil
- 1 tsp Himalayan salt
- 5 sprigs of thyme
- 1/4 cup dijon mustard
- 1 tbsp maple syrup

METHOD

1. Cut your carrots in half, lengthways.

2. Mix all the other ingredients together in a small bowl.

3. Add the carrots to a lined baking tray and coat in the marinade (the best way to do this is with your hands, a little messy but worth it!).

4. Roast at 180ºC for 40 minutes until the carrots and the glaze is golden and sticky.
