Red Pesto Butter Beans

This is for those moments when you want something delicious and good for you, with minimal effort required. It’s 3 ingredients and minimal prep or cooking required.


INGREDIENTS

  • 1 pack tenderstem broccoli

  • 1 tin butter beans

  • 160g (approx one jar) of vegan sundried tomato pesto (we recommend this one)

METHOD

1. Cut your Tenderstem broccoli into small chunks and add to a pan of boiling water over a medium heat with a pinch of salt. Cook for 5-7mins, depending on how al dente you like your broccoli

2. Drain and rinse your butter beans and add them to a large bowl. Add the cooked broccoli and your pesto. Mix it together so the pesto covers the broccoli and beans
