Supergreen Salad With Green Goddess Dressing

This salad was made for warm summer evenings (or lunch breaks). It’s packed with fresh, crunchy veg, quinoa, butter beans and toasted pistachio, then tossed with herby green goddess dressing - our fave dressing right now! Loaded with dill, basil, mint, parsley and coriander, it packs the freshest summer flavours into every bite.


INGREDIENTS

For the salad:

  • 1/2 a romaine lettuce

  • 100g edamame beans

  • 50g tenderstem broccoli

  • 100g (1/4 tin) cannellini beans

  • 1/4 cucumber

  • 60g cooked quinoa

  • 1/2 avocado

  • A handful of roasted pistachios

For the dressing:

  • 2-3 sprigs of mint

  • 2-3 parsley stems

  • 2-3 coriander stems

  • 4-5 basil leaves

  • 2-3 sprigs of dill

  • 4-5 chives

  • 1 clove of garlic

  • pinch of salt

  • 100g coconut yoghurt

  • Juice of 1/2 lemon

  • 2 tbsp olive oil

  • 2 tbsp water

METHOD

1. Blanch the edamame and broccoli in boiling water for 2-3mins, then let it cool

2. Prepare the salad ingredients: shred the lettuce, dice the cucumber and avocado and roughly chop the pistachios

3. Drain and rinse the cannellini beans

4. Make the green goddess dressing by adding the following into a blender and blend until smooth: mint, parsley, coriander, basil, dill, chives, garlic, salt, coconut yoghurt, lemon juice, olive oil and water.

5. Add everything except the chopped pistachio into a bowl with your green goddess dressing (add as much or as little as you like) and toss to combine

6. Sprinkle with your chopped pistachios and enjoy!
